Ingredients

  • Cooked sushi rice - 1 cup
  • Firm tofu - 200 grams
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Carrot - 1 medium, julienned
  • Cucumber - 1 medium, julienned
  • Spinach - 1 cup, blanched
  • Radish - 1 small, pickled and julienned
  • Nori sheets - 4 sheets
  • Sesame seeds - 1 tablespoon
  • Salt - to taste

Steps

  1. Press the tofu for about 15 minutes to remove excess moisture, then cut it into thin strips.
  2. In a skillet, heat the sesame oil over medium heat. Add the tofu strips and drizzle with soy sauce. Cook until golden brown on all sides, about 5-7 minutes. Remove from heat and let cool.
  3. Prepare the sushi rice according to package instructions, then let it cool slightly. Season with a pinch of salt and a dash of sesame oil for flavor.
  4. Blanch the spinach in boiling water for 30 seconds, then drain and squeeze out excess water. Season with a little salt and set aside.
  5. To assemble the kimbap, place a sheet of nori on a bamboo mat or clean surface, shiny side down. Spread a thin layer of sushi rice evenly over the nori, leaving about 2 cm at the top edge.
  6. Layer the tofu, carrot, cucumber, spinach, and pickled radish across the center of the rice-covered nori.
  7. Sprinkle sesame seeds over the filling, then carefully roll the nori away from you, tucking in the filling as you go, to form a tight roll.
  8. Once rolled, use a sharp knife to cut the kimbap into bite-sized pieces. Repeat with the remaining nori sheets and filling.
  9. Serve the vegan tofu kimbap with soy sauce or your favorite dipping sauce.
