- Zucchini - 50 grams, julienned
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Vegetable oil - 3 tablespoons
- Soy sauce - for serving
- Vinegar - for serving
Steps
- In a mixing bowl, combine the all-purpose flour and salt. Gradually add water, whisking until you achieve a smooth batter.
- Stir in the chopped scallions, julienned carrot, and zucchini into the batter. Mix until well combined.
- Heat 1 tablespoon of vegetable oil in a non-stick skillet over medium heat.
- Pour half of the batter into the skillet, spreading it evenly. Cook for about 4-5 minutes until the bottom is golden brown.
- Flip the pancake carefully and cook for an additional 4-5 minutes until the other side is golden brown and cooked through.
- Transfer the pancake to a plate and repeat the process with the remaining batter, adding more oil as needed.
- Cut the pancakes into wedges and serve hot with soy sauce and vinegar for dipping.
