Ingredients

  • All-purpose flour - 100 grams
  • Water - 200 milliliters
  • Scallions - 100 grams, chopped
  • Carrot - 50 grams, julienned
  • Zucchini - 50 grams, julienned
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Vegetable oil - 3 tablespoons
  • Soy sauce - for serving
  • Vinegar - for serving

Steps

  1. In a mixing bowl, combine the all-purpose flour and salt. Gradually add water, whisking until you achieve a smooth batter.
  2. Stir in the chopped scallions, julienned carrot, and zucchini into the batter. Mix until well combined.
  3. Heat 1 tablespoon of vegetable oil in a non-stick skillet over medium heat.
  4. Pour half of the batter into the skillet, spreading it evenly. Cook for about 4-5 minutes until the bottom is golden brown.
  5. Flip the pancake carefully and cook for an additional 4-5 minutes until the other side is golden brown and cooked through.
  6. Transfer the pancake to a plate and repeat the process with the remaining batter, adding more oil as needed.
  7. Cut the pancakes into wedges and serve hot with soy sauce and vinegar for dipping.
