- Short grain rice - 100 grams
- Vegetable broth - 600 ml
- Water - 200 ml
- Carrot - 50 grams, diced
- Zucchini - 50 grams, diced
- Green onion - 1 stalk, chopped
- Garlic - 2 cloves, minced
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Salt - to taste
- Pepper - to taste
Steps
- Rinse the short grain rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a pot, combine the soaked rice, vegetable broth, and water. Bring to a boil over medium heat.
- Reduce the heat to low and let the mixture simmer for about 25-30 minutes, stirring occasionally, until the rice breaks down and the porridge reaches a creamy consistency.
- In a separate pan, sauté the minced garlic in sesame oil over medium heat until fragrant. Add the diced carrots and zucchini, cooking until they are tender, about 5-7 minutes.
- Once the rice porridge is ready, stir in the sautéed vegetables, soy sauce, and season with salt and pepper to taste.
- Serve hot, garnished with chopped green onion and a drizzle of sesame oil on top.
