Ingredients

  • Short grain rice - 100 grams
  • Vegetable broth - 600 ml
  • Water - 200 ml
  • Carrot - 50 grams, diced
  • Zucchini - 50 grams, diced
  • Green onion - 1 stalk, chopped
  • Garlic - 2 cloves, minced
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Rinse the short grain rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a pot, combine the soaked rice, vegetable broth, and water. Bring to a boil over medium heat.
  3. Reduce the heat to low and let the mixture simmer for about 25-30 minutes, stirring occasionally, until the rice breaks down and the porridge reaches a creamy consistency.
  4. In a separate pan, sauté the minced garlic in sesame oil over medium heat until fragrant. Add the diced carrots and zucchini, cooking until they are tender, about 5-7 minutes.
  5. Once the rice porridge is ready, stir in the sautéed vegetables, soy sauce, and season with salt and pepper to taste.
  6. Serve hot, garnished with chopped green onion and a drizzle of sesame oil on top.
