Ingredients

  • King oyster mushrooms - 200 grams, sliced into thin strips
  • Zucchini - 100 grams, julienned
  • Red bell pepper - 100 grams, julienned
  • Carrot - 50 grams, julienned
  • Green onions - 2 stalks, chopped
  • Garlic - 3 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Soy sauce - 2 tablespoons
  • Gochujang (Korean chili paste) - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 1 tablespoon
  • Sesame seeds - 1 tablespoon, for garnish
  • Fresh cilantro - for garnish

Steps

  1. In a bowl, mix the soy sauce, gochujang, sesame oil, minced garlic, and grated ginger to create a marinade.
  2. Add the sliced king oyster mushrooms to the marinade and let them soak for about 10 minutes.
  3. Heat vegetable oil in a large frying pan or wok over medium-high heat.
  4. Once hot, add the marinated mushrooms along with the marinade to the pan and stir-fry for about 5 minutes until they are tender.
  5. Add the julienned zucchini, red bell pepper, and carrot to the pan, and stir-fry for another 5-7 minutes until the vegetables are cooked but still crisp.
  6. Stir in the chopped green onions and cook for an additional 2 minutes.
  7. Remove from heat and garnish with sesame seeds and fresh cilantro before serving.
