- Onion - 1 medium, sliced
- Carrot - 1 medium, julienned
- Bell pepper - 1 medium, sliced
- Zucchini - 1 medium, sliced
- Garlic - 3 cloves, minced
- Ginger - 1 teaspoon, minced
- Soy sauce - 2 tablespoons
- Gochujang (Korean chili paste) - 1 tablespoon
- Sesame oil - 1 tablespoon
- Maple syrup - 1 teaspoon
- Rice vinegar - 1 teaspoon
- Green onions - 2, chopped
- Sesame seeds - 1 tablespoon
- Cooking oil - 1 tablespoon
Steps
- Soak the soy curls in vegetable broth for about 10 minutes until softened, then drain and squeeze out excess liquid.
- In a bowl, mix the soy sauce, gochujang, sesame oil, maple syrup, and rice vinegar to create the marinade.
- In a large pan over medium heat, add cooking oil and sauté the garlic and ginger until fragrant, about 1 minute.
- Add the sliced onion, carrot, bell pepper, and zucchini to the pan and stir-fry for 5-7 minutes until slightly tender.
- Add the soaked soy curls to the pan and pour the marinade over them, stirring well to combine.
- Cook for an additional 5-7 minutes, allowing the flavors to meld and the soy curls to absorb the marinade.
- Remove from heat and garnish with chopped green onions and sesame seeds before serving.
