  • Green onions - 2, chopped
  • Sesame seeds - 1 tablespoon
  • Cooking oil - 1 tablespoon

Steps

  1. Soak the soy curls in vegetable broth for about 10 minutes until softened, then drain and squeeze out excess liquid.
  2. In a bowl, mix the soy sauce, gochujang, sesame oil, maple syrup, and rice vinegar to create the marinade.
  3. In a large pan over medium heat, add cooking oil and sauté the garlic and ginger until fragrant, about 1 minute.
  4. Add the sliced onion, carrot, bell pepper, and zucchini to the pan and stir-fry for 5-7 minutes until slightly tender.
  5. Add the soaked soy curls to the pan and pour the marinade over them, stirring well to combine.
  6. Cook for an additional 5-7 minutes, allowing the flavors to meld and the soy curls to absorb the marinade.
  7. Remove from heat and garnish with chopped green onions and sesame seeds before serving.
