- Sweet potato noodles (dangmyeon) - 100g
- Carrot - 1 medium, julienned
- Red bell pepper - 1 medium, julienned
- Spinach - 100g, blanched
- Mushrooms (shiitake or button) - 100g, sliced
- Green onion - 2 stalks, chopped
- Garlic - 2 cloves, minced
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Olive oil - 1 tablespoon
- Sesame seeds - 1 tablespoon, toasted
- Black pepper - to taste
Steps
- Soak the sweet potato noodles in warm water for about 30 minutes until they soften.
- In a large frying pan or wok, heat olive oil over medium heat and sauté the minced garlic until fragrant.
- Add the sliced mushrooms and cook for about 3-4 minutes until they start to soften.
- Stir in the julienned carrot and red bell pepper, cooking for an additional 3-4 minutes until the vegetables are tender.
- Add the soaked sweet potato noodles to the pan along with the soy sauce and sesame oil. Toss well to combine and cook for another 5-7 minutes until the noodles are heated through.
- Mix in the blanched spinach and chopped green onion, cooking for an additional 1-2 minutes until everything is well combined.
- Season with black pepper to taste and remove from heat.
- Serve hot, garnished with toasted sesame seeds.
