Ingredients

  • Sweet potato noodles (dangmyeon) - 100g
  • Carrot - 1 medium, julienned
  • Red bell pepper - 1 medium, julienned
  • Spinach - 100g, blanched
  • Mushrooms (shiitake or button) - 100g, sliced
  • Green onion - 2 stalks, chopped
  • Garlic - 2 cloves, minced
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Sesame seeds - 1 tablespoon, toasted
  • Black pepper - to taste

Steps

  1. Soak the sweet potato noodles in warm water for about 30 minutes until they soften.
  2. In a large frying pan or wok, heat olive oil over medium heat and sauté the minced garlic until fragrant.
  3. Add the sliced mushrooms and cook for about 3-4 minutes until they start to soften.
  4. Stir in the julienned carrot and red bell pepper, cooking for an additional 3-4 minutes until the vegetables are tender.
  5. Add the soaked sweet potato noodles to the pan along with the soy sauce and sesame oil. Toss well to combine and cook for another 5-7 minutes until the noodles are heated through.
  6. Mix in the blanched spinach and chopped green onion, cooking for an additional 1-2 minutes until everything is well combined.
  7. Season with black pepper to taste and remove from heat.
  8. Serve hot, garnished with toasted sesame seeds.
