- Green onion - 4 stalks, chopped
- Zucchini - 50 grams, grated
- Soy sauce - 1 tablespoon
- Vegetable oil - for frying
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- In a mixing bowl, combine the all-purpose flour, cornstarch, salt, and black pepper.
- Gradually add water to the dry ingredients, whisking until a smooth batter forms.
- Stir in the chopped nori, mushrooms, carrot, green onion, and zucchini until well mixed.
- Heat a non-stick frying pan over medium heat and add a tablespoon of vegetable oil.
- Pour half of the batter into the pan, spreading it out evenly to form a pancake.
- Cook for 4-5 minutes on one side until golden brown, then carefully flip and cook for another 4-5 minutes.
- Remove the pancake from the pan and repeat the process with the remaining batter, adding more oil as necessary.
- Cut the pancakes into wedges and serve hot with soy sauce for dipping.
