Ingredients

  • Silken tofu - 300 grams

  • Vegetable broth - 100 milliliters
  • Green onion - 2 stalks, chopped
  • Mushrooms (shiitake or button) - 50 grams, finely chopped
  • Carrot - 1 small, grated
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Red chili flakes - 1/2 teaspoon (optional)
  • Fresh cilantro - for garnish

Steps

  1. In a blender, combine the silken tofu, nutritional yeast, soy sauce, sesame oil, vegetable broth, salt, and black pepper. Blend until smooth and creamy.
  2. In a mixing bowl, combine the chopped green onion, finely chopped mushrooms, and grated carrot. Stir to combine.
  3. Pour the blended tofu mixture into the bowl with the vegetables and mix well until all ingredients are evenly incorporated.
  4. Transfer the mixture into a heatproof dish or a small bowl that fits into a steamer.
  5. Prepare a steamer by boiling water in a pot. Once boiling, place the dish with the tofu mixture into the steamer basket, cover, and steam for about 20 minutes, or until set.
  6. Once cooked, remove from the steamer and let cool slightly. Garnish with fresh cilantro and, if desired, sprinkle red chili flakes on top.
  7. Serve warm as a comforting breakfast or snack.
