Ingredients

  • King oyster mushrooms - 200 grams
  • Soy sauce - 60 ml
  • Water - 60 ml
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Brown sugar - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Green onions - 2, chopped
  • Sesame seeds - 1 tablespoon, toasted
  • Red chili flakes - 1 teaspoon (optional)
  • Nori seaweed sheets - 2, cut into strips (for garnish)

Steps

  1. Clean the king oyster mushrooms and slice them into thin strips resembling crab meat.
  2. In a bowl, mix the soy sauce, water, sesame oil, minced garlic, grated ginger, brown sugar, and rice vinegar to create the marinade.
  3. Add the sliced mushrooms to the marinade, ensuring they are well coated. Let them marinate for at least 20 minutes.
  4. After marinating, heat a non-stick skillet over medium heat. Add the marinated mushrooms along with the marinade and sauté for about 5-7 minutes until the mushrooms are tender and the sauce thickens slightly.
  5. Once cooked, remove from heat and stir in the chopped green onions and red chili flakes if using.
  6. Serve the Vegan Ganjang Gejang warm, garnished with toasted sesame seeds and nori strips.
