Ingredients

  • Shiitake mushrooms - 200 grams
  • Soy sauce - 4 tablespoons
  • Maple syrup - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Rice vinegar - 1 tablespoon
  • Black pepper - 1/2 teaspoon
  • Green onions - 2, chopped
  • Sesame seeds - 1 tablespoon
  • Cooked rice - 200 grams (to serve)
  • Steamed broccoli - 100 grams (to serve)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Clean the shiitake mushrooms and remove the stems, then slice them into thick pieces.
  3. In a bowl, mix together the soy sauce, maple syrup, sesame oil, minced garlic, grated ginger, rice vinegar, and black pepper to create the marinade.
  4. Add the sliced mushrooms to the marinade and toss until thoroughly coated. Allow them to marinate for at least 15 minutes.
  5. Line a baking sheet with parchment paper and spread the marinated mushrooms evenly on it.
  6. Bake the mushrooms in the preheated oven for 15 minutes, flipping halfway through to ensure even cooking.
  7. Once baked, remove the mushrooms from the oven and let them cool slightly.
  8. Serve the baked mushrooms over a bed of cooked rice, topped with chopped green onions and sesame seeds, alongside steamed broccoli.
