Ingredients
- Shiitake mushrooms - 200 grams
- Soy sauce - 4 tablespoons
- Maple syrup - 2 tablespoons
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Rice vinegar - 1 tablespoon
- Black pepper - 1/2 teaspoon
- Green onions - 2, chopped
- Sesame seeds - 1 tablespoon
- Cooked rice - 200 grams (to serve)
- Steamed broccoli - 100 grams (to serve)
Steps
- Preheat your oven to 200°C (400°F).
- Clean the shiitake mushrooms and remove the stems, then slice them into thick pieces.
- In a bowl, mix together the soy sauce, maple syrup, sesame oil, minced garlic, grated ginger, rice vinegar, and black pepper to create the marinade.
- Add the sliced mushrooms to the marinade and toss until thoroughly coated. Allow them to marinate for at least 15 minutes.
- Line a baking sheet with parchment paper and spread the marinated mushrooms evenly on it.
- Bake the mushrooms in the preheated oven for 15 minutes, flipping halfway through to ensure even cooking.
- Once baked, remove the mushrooms from the oven and let them cool slightly.
- Serve the baked mushrooms over a bed of cooked rice, topped with chopped green onions and sesame seeds, alongside steamed broccoli.
