Ingredients

  • Vegetable broth - 500 ml
  • Vegan fish cakes - 200 g
  • Carrot - 1 medium, sliced
  • Zucchini - 1 small, sliced
  • Mushrooms (shiitake or oyster) - 100 g, sliced
  • Green onion - 2 stalks, chopped
  • Garlic - 2 cloves, minced
  • Soy sauce - 2 tbsp
  • Sesame oil - 1 tbsp
  • Nori (seaweed) - 1 sheet, torn into pieces
  • Salt - to taste
  • Black pepper - to taste
  • Chili flakes (optional) - 1 tsp

Steps

  1. In a pot, heat the sesame oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
  2. Add the sliced carrots and zucchini to the pot, and cook for 3-4 minutes until they start to soften.
  3. Pour in the vegetable broth and bring it to a gentle boil.
  4. Add the vegan fish cakes, sliced mushrooms, and soy sauce to the pot. Reduce the heat and let it simmer for 10 minutes.
  5. Stir in the chopped green onions and torn nori pieces, and season with salt, black pepper, and chili flakes if desired. Simmer for an additional 2-3 minutes.
  6. Serve hot, garnished with extra green onions or nori if you like.
