- Vegan fish cakes - 200 g
- Carrot - 1 medium, sliced
- Zucchini - 1 small, sliced
- Mushrooms (shiitake or oyster) - 100 g, sliced
- Green onion - 2 stalks, chopped
- Garlic - 2 cloves, minced
- Soy sauce - 2 tbsp
- Sesame oil - 1 tbsp
- Nori (seaweed) - 1 sheet, torn into pieces
- Salt - to taste
- Black pepper - to taste
- Chili flakes (optional) - 1 tsp
Steps
- In a pot, heat the sesame oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
- Add the sliced carrots and zucchini to the pot, and cook for 3-4 minutes until they start to soften.
- Pour in the vegetable broth and bring it to a gentle boil.
- Add the vegan fish cakes, sliced mushrooms, and soy sauce to the pot. Reduce the heat and let it simmer for 10 minutes.
- Stir in the chopped green onions and torn nori pieces, and season with salt, black pepper, and chili flakes if desired. Simmer for an additional 2-3 minutes.
- Serve hot, garnished with extra green onions or nori if you like.
