- King oyster mushrooms - 200 grams, finely chopped
- Zucchini - 100 grams, grated
- Carrot - 50 grams, grated
- Firm tofu - 150 grams, drained and crumbled
- Cooked quinoa - 50 grams
- Soy sauce - 2 tablespoons
- Gochujang (Korean chili paste) - 1 tablespoon
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Spring onions - 2, chopped
- Black pepper - 1/2 teaspoon
- Cornstarch - 2 tablespoons
- Oil - for grilling
Steps
- In a mixing bowl, combine the chopped king oyster mushrooms, grated zucchini, grated carrot, crumbled tofu, and cooked quinoa.
- Add soy sauce, gochujang, sesame oil, minced garlic, grated ginger, chopped spring onions, black pepper, and cornstarch to the mixture. Mix well until all ingredients are evenly incorporated.
- Form the mixture into small patties, about 1 cm thick, and place them on a plate.
- Heat a non-stick skillet or grill pan over medium heat and add a little oil to coat the surface.
- Once hot, carefully place the patties on the pan and cook for about 4-5 minutes on each side, or until they develop a nice golden-brown crust.
- Serve the Vegan Ddeokgalbi hot with a side of lettuce leaves, sliced radishes, and your favorite dipping sauce.
