Ingredients

  • King oyster mushrooms - 200 grams, finely chopped
  • Zucchini - 100 grams, grated
  • Carrot - 50 grams, grated
  • Firm tofu - 150 grams, drained and crumbled
  • Cooked quinoa - 50 grams
  • Soy sauce - 2 tablespoons
  • Gochujang (Korean chili paste) - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Spring onions - 2, chopped
  • Black pepper - 1/2 teaspoon
  • Cornstarch - 2 tablespoons
  • Oil - for grilling

Steps

  1. In a mixing bowl, combine the chopped king oyster mushrooms, grated zucchini, grated carrot, crumbled tofu, and cooked quinoa.
  2. Add soy sauce, gochujang, sesame oil, minced garlic, grated ginger, chopped spring onions, black pepper, and cornstarch to the mixture. Mix well until all ingredients are evenly incorporated.
  3. Form the mixture into small patties, about 1 cm thick, and place them on a plate.
  4. Heat a non-stick skillet or grill pan over medium heat and add a little oil to coat the surface.
  5. Once hot, carefully place the patties on the pan and cook for about 4-5 minutes on each side, or until they develop a nice golden-brown crust.
  6. Serve the Vegan Ddeokgalbi hot with a side of lettuce leaves, sliced radishes, and your favorite dipping sauce.
