Ingredients

  • Cucumber - 1 medium, thinly sliced
  • Carrot - 1 medium, julienned
  • Radish - 100 grams, cut into matchsticks
  • Tofu - 200 grams, firm, pressed and cubed
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Rice vinegar - 2 tablespoons
  • Sugar - 1 teaspoon
  • Garlic - 2 cloves, minced
  • Gochugaru (Korean red pepper flakes) - 1 teaspoon
  • Green onion - 2 stalks, chopped
  • Vegetable oil - 2 tablespoons
  • All-purpose flour - 1/2 cup
  • Water - 1/2 cup
  • Salt - 1/2 teaspoon
  • Kimchi - 100 grams, store-bought or homemade

Steps

  1. In a mixing bowl, combine sliced cucumber, julienned carrot, and matchstick radish. In a separate bowl, whisk together soy sauce, sesame oil, rice vinegar, sugar, minced garlic, and gochugaru. Pour the dressing over the vegetables, mix well, and let marinate for at least 10 minutes.
  2. While the vegetables are marinating, prepare the tofu. Heat 1 tablespoon of vegetable oil in a skillet over medium heat. Add the cubed tofu and cook for about 5-7 minutes, turning occasionally until golden brown. Remove from heat and set aside.
  3. In another bowl, mix all-purpose flour, water, and salt to create a batter. Heat the remaining tablespoon of vegetable oil in the skillet. Pour half of the batter into the skillet, spreading it into a thin layer. Cook for 3-4 minutes until the edges are crispy, then flip and cook for another 2-3 minutes. Repeat with the remaining batter to make two pancakes.
  4. Arrange the marinated vegetables, cooked tofu, pancakes, and kimchi on a platter. Garnish with chopped green onions.
