- Rice cakes (tteok) - 200 grams
- Low-sodium vegetable broth - 500 ml
- Carrot - 1 medium, julienned
- Zucchini - 1 small, julienned
- Spinach - 50 grams, roughly chopped
- Mushrooms (shiitake or button) - 100 grams, sliced
- Garlic - 2 cloves, minced
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Green onions - 2, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- In a large pot, heat the sesame oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
- Add the sliced mushrooms and cook until they are soft, about 3-4 minutes.
- Pour in the vegetable broth and bring to a simmer. Add the soy sauce, carrots, and zucchini, and cook for another 5 minutes.
- Stir in the rice cakes and cook for an additional 5 minutes or until the rice cakes are tender.
- Add the chopped spinach and green onions, cooking for 2 more minutes until the spinach wilts. Adjust seasoning with salt and black pepper as desired.
- Serve the Tteokguk Noodles hot in bowls, garnished with extra green onions if preferred.
