  • Korean gochujang (red chili paste) - 2 tablespoons

  • Garlic, minced - 2 cloves
  • Fresh vegetables (bell peppers, onions, spinach) - 1 cup, chopped
  • Low-fat mozzarella cheese - 1 cup, shredded
  • Cooked tteok (Korean rice cakes) - 150 grams, sliced
  • Sesame seeds - 1 tablespoon
  • Green onions, chopped - 2 tablespoons

Steps

  1. In a mixing bowl, combine brown rice flour, tapioca starch, water, and salt to form a smooth batter.
  2. Heat a non-stick skillet over medium heat, add a little olive oil, and pour in the batter to create a thin crust. Cook for about 5-7 minutes or until the bottom is golden brown.
  3. Flip the crust carefully and cook the other side for another 5 minutes.
  4. In a separate pan, heat the remaining olive oil and sauté minced garlic until fragrant. Add the chopped vegetables and cook until softened.
  5. Stir in the gochujang, mixing well with the vegetables, and then add the sliced tteok, cooking for an additional 2-3 minutes until heated through.
  6. Spread the vegetable and tteok mixture evenly over the cooked crust, then sprinkle the shredded mozzarella cheese on top.
  7. Cover the skillet with a lid and cook on low heat for about 5 minutes, or until the cheese is melted and bubbly.
  8. Remove from heat, garnish with sesame seeds and chopped green onions, and slice to serve.
