Steps
- In a mixing bowl, combine brown rice flour, tapioca starch, water, and salt to form a smooth batter.
- Heat a non-stick skillet over medium heat, add a little olive oil, and pour in the batter to create a thin crust. Cook for about 5-7 minutes or until the bottom is golden brown.
- Flip the crust carefully and cook the other side for another 5 minutes.
- In a separate pan, heat the remaining olive oil and sauté minced garlic until fragrant. Add the chopped vegetables and cook until softened.
- Stir in the gochujang, mixing well with the vegetables, and then add the sliced tteok, cooking for an additional 2-3 minutes until heated through.
- Spread the vegetable and tteok mixture evenly over the cooked crust, then sprinkle the shredded mozzarella cheese on top.
- Cover the skillet with a lid and cook on low heat for about 5 minutes, or until the cheese is melted and bubbly.
- Remove from heat, garnish with sesame seeds and chopped green onions, and slice to serve.
