Tteokbokki

Ingredients
- Korean rice cakes - 200 grams
- Tofu - 100 grams, cubed
- Eggs - 2 large
- Fish cakes - 100 grams, sliced
- Korean gochujang (red chili paste) - 2 tablespoons
- Soy sauce - 1 tablespoon
- Sugar - 1 teaspoon
- Sesame oil - 1 teaspoon
- Water - 300 ml
- Green onions - 2, chopped
- Sesame seeds - 1 tablespoon, for garnish
Steps
- In a pot, bring 300 ml of water to a boil and add the Korean rice cakes. Cook for about 5-7 minutes until they are soft.
- While the rice cakes are cooking, in a separate skillet, heat sesame oil over medium heat and add cubed tofu. Cook until golden brown on all sides, then add the sliced fish cakes and cook for another 3 minutes.
- Add gochujang, soy sauce, and sugar to the skillet, mixing well to coat the tofu and fish cakes with the sauce.
- Once the rice cakes are soft, drain them and add to the skillet with the tofu and fish cakes. Stir well to combine everything and cook for an additional 5 minutes, allowing the flavors to meld.
- In the last few minutes of cooking, crack the eggs on top of the tteokbokki, cover the skillet, and let the eggs steam until the whites are set but the yolks are still runny, about 3-4 minutes.
- Garnish with chopped green onions and sesame seeds before serving.
