Ingredients

  • Glutinous rice flour - 150 grams
  • Water - 100 ml
  • Sugar - 30 grams
  • Red bean paste - 50 grams
  • Cornstarch - 30 grams
  • Sesame seeds - 1 tablespoon (optional)

Steps

  1. In a mixing bowl, combine the glutinous rice flour and sugar. Gradually add water while stirring until the mixture is smooth and free of lumps.
  2. Transfer the mixture into a heatproof dish or a steamer-safe bowl. Cover with a damp cloth or plastic wrap to prevent condensation.
  3. Steam the mixture over boiling water for about 20 minutes, stirring halfway through to ensure even cooking.
  4. Once the mixture becomes sticky and translucent, remove it from the heat and let it cool slightly.
  5. Dust a clean surface with cornstarch. Once cool enough to handle, transfer the rice cake mixture onto the surface and knead gently for a few minutes.
  6. Divide the dough into small portions and flatten each piece into a disc. Place about 1 teaspoon of red bean paste in the center and fold the edges over to seal it, forming a ball.
  7. Roll the filled tteok in cornstarch to prevent sticking, and optionally sprinkle with sesame seeds.
  8. Serve immediately or store in an airtight container for up to 2 days.
