Ingredients

  • Sweet rice flour (glutinous rice flour) - 150 grams
  • Water - 180 milliliters
  • Maple syrup - 30 grams
  • Red bean paste (unsweetened) - 50 grams
  • Sesame seeds (toasted) - 2 tablespoons
  • Cornstarch (for dusting) - 2 tablespoons

Steps

  1. In a mixing bowl, combine sweet rice flour and water until smooth.
  2. Add maple syrup to the mixture and stir until well combined.
  3. Pour the mixture into a heat-resistant dish or a steamer lined with parchment paper.
  4. Steam the mixture over high heat for about 20 minutes, stirring halfway through to ensure even cooking.
  5. After 20 minutes, add the red bean paste to the top of the mixture and steam for an additional 10 minutes.
  6. Remove from the steamer and let it cool for a few minutes.
  7. Dust a clean surface with cornstarch and transfer the steamed rice cake onto it.
  8. Cut the tteok into small squares or desired shapes, then sprinkle with toasted sesame seeds.
  9. Serve warm or at room temperature, and enjoy your dairy-free tteok.
