- Sweet rice flour (glutinous rice flour) - 150 grams
- Water - 180 milliliters
- Maple syrup - 30 grams
- Red bean paste (unsweetened) - 50 grams
- Sesame seeds (toasted) - 2 tablespoons
- Cornstarch (for dusting) - 2 tablespoons
Steps
- In a mixing bowl, combine sweet rice flour and water until smooth.
- Add maple syrup to the mixture and stir until well combined.
- Pour the mixture into a heat-resistant dish or a steamer lined with parchment paper.
- Steam the mixture over high heat for about 20 minutes, stirring halfway through to ensure even cooking.
- After 20 minutes, add the red bean paste to the top of the mixture and steam for an additional 10 minutes.
- Remove from the steamer and let it cool for a few minutes.
- Dust a clean surface with cornstarch and transfer the steamed rice cake onto it.
- Cut the tteok into small squares or desired shapes, then sprinkle with toasted sesame seeds.
- Serve warm or at room temperature, and enjoy your dairy-free tteok.
