Ingredients

  • Pork tenderloin - 300 grams
  • Cornstarch - 100 grams
  • Egg - 1 large
  • Vegetable oil - 500 ml (for frying)
  • Carrot - 1 medium, julienned
  • Bell pepper - 1 medium, sliced
  • Onion - 1 medium, sliced
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Soy sauce - 2 tablespoons
  • Rice vinegar - 2 tablespoons
  • Sugar - 2 tablespoons
  • Water - 100 ml
  • Sesame oil - 1 teaspoon
  • Green onions - 2, chopped (for garnish)

Steps

  1. Slice the pork tenderloin into bite-sized pieces and season with salt and pepper.
  2. In a bowl, beat the egg and mix it with the pork pieces until well coated.
  3. Add the cornstarch to the pork and ensure each piece is evenly coated.
  4. Heat the vegetable oil in a deep pan over medium heat. Once hot, fry the pork pieces in batches until golden brown and crispy (about 4-5 minutes per batch). Remove and drain on paper towels.
  5. In a separate pan, heat a tablespoon of vegetable oil and sauté the garlic and ginger until fragrant.
  6. Add the carrot, bell pepper, and onion, and stir-fry for about 3-4 minutes until slightly tender.
  7. In a bowl, mix soy sauce, rice vinegar, sugar, and water. Pour this mixture over the vegetables and bring to a simmer.
  8. Once the sauce thickens slightly, add the fried pork into the pan and stir gently to coat all pieces in the sauce.
  9. Drizzle with sesame oil and mix well. Cook for an additional 2 minutes.
  10. Serve hot, garnished with chopped green onions.
