- Pork tenderloin - 300 grams
- Cornstarch - 100 grams
- Egg - 1 large
- Vegetable oil - 500 ml (for frying)
- Carrot - 1 medium, julienned
- Bell pepper - 1 medium, sliced
- Onion - 1 medium, sliced
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Soy sauce - 2 tablespoons
- Rice vinegar - 2 tablespoons
- Sugar - 2 tablespoons
- Water - 100 ml
- Sesame oil - 1 teaspoon
- Green onions - 2, chopped (for garnish)
Steps
- Slice the pork tenderloin into bite-sized pieces and season with salt and pepper.
- In a bowl, beat the egg and mix it with the pork pieces until well coated.
- Add the cornstarch to the pork and ensure each piece is evenly coated.
- Heat the vegetable oil in a deep pan over medium heat. Once hot, fry the pork pieces in batches until golden brown and crispy (about 4-5 minutes per batch). Remove and drain on paper towels.
- In a separate pan, heat a tablespoon of vegetable oil and sauté the garlic and ginger until fragrant.
- Add the carrot, bell pepper, and onion, and stir-fry for about 3-4 minutes until slightly tender.
- In a bowl, mix soy sauce, rice vinegar, sugar, and water. Pour this mixture over the vegetables and bring to a simmer.
- Once the sauce thickens slightly, add the fried pork into the pan and stir gently to coat all pieces in the sauce.
- Drizzle with sesame oil and mix well. Cook for an additional 2 minutes.
- Serve hot, garnished with chopped green onions.
