Ingredients

  • Sweet potato - 300 grams
  • Onion - 1 small (about 100 grams)
  • Garlic - 2 cloves
  • Vegetable broth - 500 ml
  • Sesame oil - 1 tablespoon
  • Soy sauce - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Green onions - 2 stalks (for garnish)
  • Cilantro - a handful (for garnish)

Steps

  1. Peel and chop the sweet potato into small cubes.
  2. Dice the onion and mince the garlic.
  3. In a pot, heat the sesame oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  4. Add the minced garlic and sauté for an additional minute until fragrant.
  5. Add the sweet potato cubes to the pot and stir to combine.
  6. Pour in the vegetable broth and bring to a boil. Reduce heat to low and simmer for 15-20 minutes, or until the sweet potatoes are tender.
  7. Use an immersion blender to puree the soup until smooth. Alternatively, transfer to a blender in batches and blend until smooth.
  8. Stir in the soy sauce, and season with salt and black pepper to taste. Heat through for a few more minutes if necessary.
  9. Serve hot, garnished with chopped green onions and cilantro.
