- Garlic - 2 cloves
- Vegetable broth - 500 ml
- Sesame oil - 1 tablespoon
- Soy sauce - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Green onions - 2 stalks (for garnish)
- Cilantro - a handful (for garnish)
Steps
- Peel and chop the sweet potato into small cubes.
- Dice the onion and mince the garlic.
- In a pot, heat the sesame oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and sauté for an additional minute until fragrant.
- Add the sweet potato cubes to the pot and stir to combine.
- Pour in the vegetable broth and bring to a boil. Reduce heat to low and simmer for 15-20 minutes, or until the sweet potatoes are tender.
- Use an immersion blender to puree the soup until smooth. Alternatively, transfer to a blender in batches and blend until smooth.
- Stir in the soy sauce, and season with salt and black pepper to taste. Heat through for a few more minutes if necessary.
- Serve hot, garnished with chopped green onions and cilantro.
