Ingredients
- Short grain rice - 1 cup (200g)
- Sweet potato, peeled and diced - 1 medium (200g)
- Water - 1.5 cups (360ml)
- Vegetable broth - 1 cup (240ml)
- Soy sauce - 2 tablespoons (30ml)
- Sesame oil - 1 tablespoon (15ml)
- Garlic, minced - 2 cloves
- Scallions, chopped - 2 stalks
- Sesame seeds - 1 tablespoon (15g)
- Salt - to taste
Steps
- Rinse the short grain rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a pot, combine the diced sweet potato and water, and bring to a boil. Cook for about 10 minutes, or until tender. Drain and set aside.
- In the same pot, add the soaked rice and vegetable broth, and bring to a boil. Reduce heat to low, cover, and cook for 15 minutes or until the rice is tender and all the liquid is absorbed.
- Once the rice is cooked, gently fold in the sweet potatoes, soy sauce, sesame oil, and minced garlic. Cover and let it sit for another 5 minutes to allow the flavors to meld.
- Serve the Sweet Potato Rice in bowls, garnished with chopped scallions and a sprinkle of sesame seeds. Adjust salt to taste.
