Ingredients

  • Short grain rice - 1 cup (200g)
  • Sweet potato, peeled and diced - 1 medium (200g)
  • Water - 1.5 cups (360ml)
  • Vegetable broth - 1 cup (240ml)
  • Soy sauce - 2 tablespoons (30ml)
  • Sesame oil - 1 tablespoon (15ml)
  • Garlic, minced - 2 cloves
  • Scallions, chopped - 2 stalks
  • Sesame seeds - 1 tablespoon (15g)
  • Salt - to taste

Steps

  1. Rinse the short grain rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a pot, combine the diced sweet potato and water, and bring to a boil. Cook for about 10 minutes, or until tender. Drain and set aside.
  3. In the same pot, add the soaked rice and vegetable broth, and bring to a boil. Reduce heat to low, cover, and cook for 15 minutes or until the rice is tender and all the liquid is absorbed.
  4. Once the rice is cooked, gently fold in the sweet potatoes, soy sauce, sesame oil, and minced garlic. Cover and let it sit for another 5 minutes to allow the flavors to meld.
  5. Serve the Sweet Potato Rice in bowls, garnished with chopped scallions and a sprinkle of sesame seeds. Adjust salt to taste.
