Ingredients

  • Zucchini - 100 grams
  • Carrot - 100 grams
  • Vegetable broth - 500 ml
  • Soy sauce - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Sesame oil - 1 tablespoon
  • Green onions - 2, chopped
  • Sesame seeds - 1 tablespoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Peel the sweet potato, zucchini, and carrot, then spiralize them into noodles using a spiralizer or julienne peeler.
  2. In a medium saucepan, heat the vegetable broth over medium heat and add the minced garlic.
  3. Add the sweet potato noodles to the simmering broth and cook for about 5 minutes until just tender.
  4. Add the zucchini and carrot noodles to the broth and cook for an additional 3-4 minutes until all noodles are cooked through.
  5. Stir in the soy sauce, sesame oil, salt, and pepper to taste, mixing well to combine.
  6. Remove from heat and serve the noodles in bowls, garnished with chopped green onions and sesame seeds.
