- Gochugaru (Korean red pepper flakes) - 1 tablespoon
- Soy sauce - 1 tablespoon
- Vegetable broth - 250 ml
- Green onions - 2, chopped
- Eggs - 2
- Salt - to taste
- Black pepper - to taste
Steps
- In a medium pot, heat sesame oil over medium heat and sauté minced garlic until fragrant.
- Add gochugaru and stir for about 30 seconds to release its flavor.
- Pour in vegetable broth and soy sauce, then bring to a gentle simmer.
- Carefully add the soft tofu, breaking it into large pieces, and allow it to simmer for 5-7 minutes to absorb the flavors.
- While the tofu simmers, in a separate pan, fry the eggs sunny-side up, seasoning with salt and black pepper.
- Once the tofu is heated through, remove the pot from heat and stir in chopped green onions.
- To serve, place cooked rice in bowls, top with the tofu broth mixture, and finish with a fried egg on top.
