Ingredients

  • Fresh udon noodles - 200 grams
  • Soft tofu (sundubu) - 200 grams
  • Garlic, minced - 2 cloves
  • Ginger, minced - 1 teaspoon
  • Carrot, julienned - 1 small
  • Zucchini, julienned - 1 small
  • Baby spinach - 100 grams
  • Green onion, chopped - 2 stalks
  • Korean chili flakes (gochugaru) - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Vegetable broth - 500 ml
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Cook the udon noodles according to package instructions, then drain and set aside.
  2. In a large pot, heat vegetable broth over medium heat and add minced garlic and ginger, sautéing until fragrant.
  3. Add the julienned carrot and zucchini to the pot, cooking for about 3-4 minutes until softened.
  4. Gently add the soft tofu to the pot, breaking it into chunks with a spoon, and let it simmer for about 5 minutes.
  5. Stir in the baby spinach, chopped green onion, gochugaru, soy sauce, and sesame oil, mixing well.
  6. Season with salt and black pepper to taste, then simmer for another 2 minutes.
  7. Serve the sundubu mixture over the cooked udon noodles, garnishing with additional green onions if desired.
