Ingredients
- Soft tofu - 200 grams
- Ground chicken or turkey - 200 grams
- Panko breadcrumbs - 50 grams
- Gochujang (Korean red chili paste) - 1 tablespoon
- Garlic (minced) - 2 cloves
- Scallions (chopped) - 2 tablespoons
- Egg - 1 large
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Vegetable oil - 2 tablespoons
- Burger buns - 2
- Lettuce leaves - 2
- Sliced tomatoes - 1 medium
- Kimchi - 100 grams
Steps
- In a large bowl, crumble the soft tofu with your hands until it's broken down but still chunky.
- Add the ground chicken or turkey, panko breadcrumbs, gochujang, minced garlic, chopped scallions, egg, salt, and black pepper to the bowl. Mix everything together until well combined.
- Divide the mixture into two equal portions and shape them into patties.
- Heat the vegetable oil in a skillet over medium heat. Once hot, add the patties and cook for about 5-6 minutes on each side, or until they are golden brown and cooked through.
- While the patties are cooking, lightly toast the burger buns in a separate pan or in the oven until golden.
- Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the cooked patty, a slice of tomato, and a generous spoonful of kimchi. Top with the other half of the bun.
