Ingredients

  • Soft tofu - 200 grams
  • Ground chicken or turkey - 200 grams
  • Panko breadcrumbs - 50 grams
  • Gochujang (Korean red chili paste) - 1 tablespoon
  • Garlic (minced) - 2 cloves
  • Scallions (chopped) - 2 tablespoons
  • Egg - 1 large
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Vegetable oil - 2 tablespoons
  • Burger buns - 2
  • Lettuce leaves - 2
  • Sliced tomatoes - 1 medium
  • Kimchi - 100 grams

Steps

  1. In a large bowl, crumble the soft tofu with your hands until it's broken down but still chunky.
  2. Add the ground chicken or turkey, panko breadcrumbs, gochujang, minced garlic, chopped scallions, egg, salt, and black pepper to the bowl. Mix everything together until well combined.
  3. Divide the mixture into two equal portions and shape them into patties.
  4. Heat the vegetable oil in a skillet over medium heat. Once hot, add the patties and cook for about 5-6 minutes on each side, or until they are golden brown and cooked through.
  5. While the patties are cooking, lightly toast the burger buns in a separate pan or in the oven until golden.
  6. Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the cooked patty, a slice of tomato, and a generous spoonful of kimchi. Top with the other half of the bun.
  7. Serve immediately and enjoy your Sundubu Burger!
