Ingredients
- Short-grain rice - 1 cup (200g)
- Water - 1.5 cups (360ml)
- Soft tofu - 200g
- Zucchini - 1 small (100g), diced
- Carrot - 1 small (50g), diced
- Green onion - 2 stalks, chopped
- Garlic - 2 cloves, minced
- Vegetable broth - 2 cups (480ml)
- Sesame oil - 1 tablespoon (15ml)
- Soy sauce - 1 tablespoon (15ml)
- Gochugaru (Korean red pepper flakes) - 1 teaspoon (5g)
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the short-grain rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a pot, combine the soaked rice and 1.5 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the rice is cooked and water is absorbed.
- While the rice is cooking, heat sesame oil in a medium-sized pot over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Add the diced zucchini and carrot to the pot, cooking for about 3-4 minutes until they begin to soften.
- Pour in the vegetable broth and bring it to a gentle simmer. Add the soft tofu, breaking it into large chunks, and the soy sauce, gochugaru, salt, and pepper. Simmer for another 5 minutes.
- Once the rice is cooked, fluff it and divide it between two bowls. Ladle the tofu and vegetable broth mixture over the rice.
- Garnish with chopped green onions before serving warm.
