Ingredients

  • Short-grain rice - 1 cup (200g)
  • Water - 1.5 cups (360ml)
  • Soft tofu - 200g
  • Zucchini - 1 small (100g), diced
  • Carrot - 1 small (50g), diced
  • Green onion - 2 stalks, chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 2 cups (480ml)
  • Sesame oil - 1 tablespoon (15ml)
  • Soy sauce - 1 tablespoon (15ml)
  • Gochugaru (Korean red pepper flakes) - 1 teaspoon (5g)
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the short-grain rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a pot, combine the soaked rice and 1.5 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the rice is cooked and water is absorbed.
  3. While the rice is cooking, heat sesame oil in a medium-sized pot over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  4. Add the diced zucchini and carrot to the pot, cooking for about 3-4 minutes until they begin to soften.
  5. Pour in the vegetable broth and bring it to a gentle simmer. Add the soft tofu, breaking it into large chunks, and the soy sauce, gochugaru, salt, and pepper. Simmer for another 5 minutes.
  6. Once the rice is cooked, fluff it and divide it between two bowls. Ladle the tofu and vegetable broth mixture over the rice.
  7. Garnish with chopped green onions before serving warm.
