Ingredients

  • Sundae (Korean blood sausage) - 200 grams
  • Beef broth - 500 ml
  • Water - 500 ml
  • Garlic, minced - 3 cloves
  • Green onion, chopped - 2 stalks
  • Mushrooms (shiitake or enoki) - 100 grams
  • Zucchini, sliced - 100 grams
  • Carrot, julienned - 50 grams
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Red pepper flakes (gochugaru) - 1 teaspoon

Steps

  1. In a pot, combine the beef broth and water, and bring to a simmer over medium heat.
  2. Add the minced garlic and cook for 2 minutes until fragrant.
  3. Slice the sundae into bite-sized pieces and add it to the pot along with the mushrooms, zucchini, and carrot.
  4. Let the soup simmer for about 10-15 minutes until the vegetables are tender and the sundae is heated through.
  5. Stir in the soy sauce, sesame oil, salt, black pepper, and red pepper flakes, adjusting the seasoning to taste.
  6. Add the chopped green onions just before serving, and allow to simmer for another 2 minutes.
  7. Serve hot, garnished with additional green onions if desired.
