- Sundae (Korean blood sausage) - 200 grams
- Beef broth - 500 ml
- Water - 500 ml

- Green onion, chopped - 2 stalks
- Mushrooms (shiitake or enoki) - 100 grams
- Zucchini, sliced - 100 grams
- Carrot, julienned - 50 grams
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Red pepper flakes (gochugaru) - 1 teaspoon
Steps
- In a pot, combine the beef broth and water, and bring to a simmer over medium heat.
- Add the minced garlic and cook for 2 minutes until fragrant.
- Slice the sundae into bite-sized pieces and add it to the pot along with the mushrooms, zucchini, and carrot.
- Let the soup simmer for about 10-15 minutes until the vegetables are tender and the sundae is heated through.
- Stir in the soy sauce, sesame oil, salt, black pepper, and red pepper flakes, adjusting the seasoning to taste.
- Add the chopped green onions just before serving, and allow to simmer for another 2 minutes.
- Serve hot, garnished with additional green onions if desired.
