Ingredients

  • Korean blood sausage (sundae) - 200 grams
  • Tofu (firm) - 150 grams
  • Eggs - 4 large
  • Green onions - 2 stalks, finely chopped
  • Garlic - 2 cloves, minced
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Spinach - 100 grams, blanched
  • Carrot - 1 medium, julienned
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Prepare the spinach by blanching it in boiling water for 1-2 minutes, then drain and set aside.
  2. In a mixing bowl, crumble the firm tofu and mix it with the finely chopped green onions, minced garlic, soy sauce, sesame oil, salt, and pepper until well combined.
  3. In a non-stick skillet, scramble the 4 eggs over medium heat until fully cooked and set aside.
  4. Slice the Korean blood sausage into bite-sized pieces and steam them for about 10 minutes until heated through.
  5. On a serving plate, create a bed of blanched spinach and arrange the sliced blood sausage on top.
  6. Add the tofu mixture on one side of the plate and the scrambled eggs on the other side, garnishing with julienned carrots and additional green onions if desired.
