Ingredients
- Korean blood sausage (sundae) - 200 grams
- Tofu (firm) - 150 grams
- Eggs - 4 large
- Green onions - 2 stalks, finely chopped
- Garlic - 2 cloves, minced
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Spinach - 100 grams, blanched
- Carrot - 1 medium, julienned
- Salt - to taste
- Pepper - to taste
Steps
- Prepare the spinach by blanching it in boiling water for 1-2 minutes, then drain and set aside.
- In a mixing bowl, crumble the firm tofu and mix it with the finely chopped green onions, minced garlic, soy sauce, sesame oil, salt, and pepper until well combined.
- In a non-stick skillet, scramble the 4 eggs over medium heat until fully cooked and set aside.
- Slice the Korean blood sausage into bite-sized pieces and steam them for about 10 minutes until heated through.
- On a serving plate, create a bed of blanched spinach and arrange the sliced blood sausage on top.
- Add the tofu mixture on one side of the plate and the scrambled eggs on the other side, garnishing with julienned carrots and additional green onions if desired.
