- Shiitake mushrooms - 100 grams
- Baby bok choy - 150 grams
- Carrot - 1 medium, julienned
- Firm tofu - 200 grams, cut into cubes
- Green onion - 2 stalks, chopped
- Soy sauce - 60 ml
- Mirin - 30 ml
- Vegetable broth - 300 ml
- Sesame oil - 1 tablespoon
- Sugar - 1 teaspoon
- Rice noodles - 100 grams
- Fresh cilantro - a handful for garnish
Steps
- Prepare all the ingredients by washing and cutting the mushrooms, bok choy, carrot, and tofu into appropriate sizes.
- In a pot, heat sesame oil over medium heat and add the shiitake mushrooms and carrots. Sauté for 3-4 minutes until they start to soften.
- Add the vegetable broth, soy sauce, mirin, and sugar to the pot and bring to a gentle simmer.
- Stir in the tofu and bok choy, cooking for an additional 5-7 minutes until the bok choy is tender.
- Meanwhile, cook the rice noodles according to package instructions, then drain and set aside.
- Once the vegetables and tofu are cooked, add the rice noodles to the pot and gently mix to combine.
- Serve hot, garnished with chopped green onions and fresh cilantro.
