Ingredients

  • Shiitake mushrooms - 100 grams
  • Baby bok choy - 150 grams
  • Carrot - 1 medium, julienned
  • Firm tofu - 200 grams, cut into cubes
  • Green onion - 2 stalks, chopped
  • Soy sauce - 60 ml
  • Mirin - 30 ml
  • Vegetable broth - 300 ml
  • Sesame oil - 1 tablespoon
  • Sugar - 1 teaspoon
  • Rice noodles - 100 grams
  • Fresh cilantro - a handful for garnish

Steps

  1. Prepare all the ingredients by washing and cutting the mushrooms, bok choy, carrot, and tofu into appropriate sizes.
  2. In a pot, heat sesame oil over medium heat and add the shiitake mushrooms and carrots. Sauté for 3-4 minutes until they start to soften.
  3. Add the vegetable broth, soy sauce, mirin, and sugar to the pot and bring to a gentle simmer.
  4. Stir in the tofu and bok choy, cooking for an additional 5-7 minutes until the bok choy is tender.
  5. Meanwhile, cook the rice noodles according to package instructions, then drain and set aside.
  6. Once the vegetables and tofu are cooked, add the rice noodles to the pot and gently mix to combine.
  7. Serve hot, garnished with chopped green onions and fresh cilantro.
