Ingredients

  • Napa cabbage, chopped - 100 grams
  • Green onions, chopped - 2 stalks
  • Carrot, julienned - 1 medium
  • Garlic, minced - 2 cloves
  • Ginger, grated - 1 teaspoon
  • Soy sauce - 3 tablespoons
  • Mirin - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Water - 500 ml
  • Tofu, cubed - 100 grams
  • Black pepper - to taste
  • Sesame seeds - for garnish

Steps

  1. Cook udon noodles according to package instructions, then drain and set aside.
  2. In a large pot, heat sesame oil over medium heat. Add minced garlic and grated ginger, sauté until fragrant.
  3. Add sliced beef sirloin to the pot and cook until lightly browned.
  4. Stir in shiitake mushrooms, napa cabbage, and carrot. Sauté for about 5 minutes until vegetables are slightly softened.
  5. Pour in water, soy sauce, and mirin. Bring to a gentle boil.
  6. Add cubed tofu to the pot, then reduce heat and let it simmer for 10 minutes.
  7. Season with black pepper and adjust soy sauce to taste.
  8. Add the cooked udon noodles to the pot, stirring gently to combine and heat through.
  9. Serve hot, garnished with chopped green onions and sesame seeds.
