Ingredients

  • Jasmine rice - 150 grams
  • Water - 300 ml
  • Firm tofu - 200 grams, cubed
  • Shiitake mushrooms - 100 grams, sliced
  • Carrot - 1 medium, julienned
  • Napa cabbage - 100 grams, chopped
  • Green onions - 2, chopped
  • Soy sauce - 60 ml
  • Mirin - 30 ml
  • Sugar - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Black pepper - to taste
  • Sesame seeds - for garnish

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then combine with 300 ml of water in a pot and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes.
  2. While the rice is cooking, heat sesame oil in a large skillet over medium heat. Add the minced garlic and grated ginger, sautéing for 1-2 minutes until fragrant.
  3. Add the cubed tofu to the skillet and cook until golden brown on all sides, about 5-7 minutes. Remove the tofu and set aside.
  4. In the same skillet, add the shiitake mushrooms, julienned carrot, and chopped napa cabbage. Sauté for about 5 minutes until the vegetables are tender.
  5. Return the tofu to the skillet and add soy sauce, mirin, and sugar. Stir well and let it simmer for an additional 3-4 minutes, seasoning with black pepper to taste.
  6. Once the rice is cooked, fluff it with a fork and divide it between two bowls. Top each bowl with the tofu and vegetable mixture.
  7. Garnish with chopped green onions and sesame seeds before serving.
