- Udon noodles - 200 grams
- Beef (thinly sliced) - 100 grams
- Shiitake mushrooms (sliced) - 100 grams
- Carrot (julienned) - 1 medium
- Spinach - 100 grams
- Green onions (chopped) - 2 stalks
- Soy sauce - 3 tablespoons
- Mirin - 2 tablespoons
- Sesame oil - 1 tablespoon
- Garlic (minced) - 2 cloves
- Ginger (grated) - 1 teaspoon
- Water - 500 milliliters
- Toasted sesame seeds - 1 tablespoon (for garnish)
Steps
- In a pot, bring 500 milliliters of water to a boil and cook the udon noodles according to package instructions. Drain and set aside.
- In the same pot, heat sesame oil over medium heat. Add minced garlic and grated ginger, sautéing until fragrant.
- Add the sliced beef to the pot and cook until browned, about 3-4 minutes.
- Add the shiitake mushrooms and julienned carrot, stirring for another 2-3 minutes until they begin to soften.
- Pour in the soy sauce and mirin, followed by the cooked noodles and water. Stir well to combine.
- Add the spinach and chopped green onions, cooking until the spinach wilts, about 2-3 minutes.
- Serve hot, garnished with toasted sesame seeds.
