Ingredients

  • Udon noodles - 200 grams
  • Beef (thinly sliced) - 100 grams
  • Shiitake mushrooms (sliced) - 100 grams
  • Carrot (julienned) - 1 medium
  • Spinach - 100 grams
  • Green onions (chopped) - 2 stalks
  • Soy sauce - 3 tablespoons
  • Mirin - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic (minced) - 2 cloves
  • Ginger (grated) - 1 teaspoon
  • Water - 500 milliliters
  • Toasted sesame seeds - 1 tablespoon (for garnish)

Steps

  1. In a pot, bring 500 milliliters of water to a boil and cook the udon noodles according to package instructions. Drain and set aside.
  2. In the same pot, heat sesame oil over medium heat. Add minced garlic and grated ginger, sautéing until fragrant.
  3. Add the sliced beef to the pot and cook until browned, about 3-4 minutes.
  4. Add the shiitake mushrooms and julienned carrot, stirring for another 2-3 minutes until they begin to soften.
  5. Pour in the soy sauce and mirin, followed by the cooked noodles and water. Stir well to combine.
  6. Add the spinach and chopped green onions, cooking until the spinach wilts, about 2-3 minutes.
  7. Serve hot, garnished with toasted sesame seeds.
