Ingredients

  • Cooked rice - 1 cup (200 g)
  • Firm tofu - 200 g, cubed
  • Shiitake mushrooms - 100 g, sliced
  • Carrot - 1 medium, julienned
  • Napa cabbage - 100 g, chopped
  • Green onions - 2, chopped
  • Soy sauce - 3 tablespoons
  • Mirin - 2 tablespoons
  • Vegetable broth - 100 ml
  • Sesame oil - 1 tablespoon
  • Sugar - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Sesame seeds - for garnish

Steps

  1. In a bowl, mix soy sauce, mirin, vegetable broth, sugar, sesame oil, salt, and black pepper to create the marinade.
  2. Add the cubed tofu to the marinade and let it sit for at least 15 minutes to absorb the flavors.
  3. In a large skillet or wok, heat a little sesame oil over medium heat.
  4. Add the marinated tofu and cook until golden brown, about 5-7 minutes. Remove from the skillet and set aside.
  5. In the same skillet, add the shiitake mushrooms, carrots, and napa cabbage. Stir-fry for about 5-7 minutes until the vegetables are tender.
  6. Return the tofu to the skillet, add the chopped green onions, and stir to combine everything. Cook for an additional 2-3 minutes.
  7. Serve the vegetable and tofu mixture over a bed of cooked rice, garnished with sesame seeds.
