- Cooked rice - 1 cup (200 g)
- Firm tofu - 200 g, cubed
- Shiitake mushrooms - 100 g, sliced
- Carrot - 1 medium, julienned
- Napa cabbage - 100 g, chopped
- Green onions - 2, chopped
- Soy sauce - 3 tablespoons
- Mirin - 2 tablespoons
- Vegetable broth - 100 ml
- Sesame oil - 1 tablespoon
- Sugar - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Sesame seeds - for garnish
Steps
- In a bowl, mix soy sauce, mirin, vegetable broth, sugar, sesame oil, salt, and black pepper to create the marinade.
- Add the cubed tofu to the marinade and let it sit for at least 15 minutes to absorb the flavors.
- In a large skillet or wok, heat a little sesame oil over medium heat.
- Add the marinated tofu and cook until golden brown, about 5-7 minutes. Remove from the skillet and set aside.
- In the same skillet, add the shiitake mushrooms, carrots, and napa cabbage. Stir-fry for about 5-7 minutes until the vegetables are tender.
- Return the tofu to the skillet, add the chopped green onions, and stir to combine everything. Cook for an additional 2-3 minutes.
- Serve the vegetable and tofu mixture over a bed of cooked rice, garnished with sesame seeds.
