Ingredients

  • Short-grain rice - 1 cup

  • Fresh spinach - 200 grams
  • Garlic - 2 cloves, minced
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 1 tablespoon
  • Salt - to taste
  • Black sesame seeds - 1 teaspoon (for garnish)
  • Green onion - 2 stalks, chopped (for garnish)

Steps

  1. Rinse the short-grain rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a medium pot, bring 1.5 cups of water to a boil, add the soaked rice, reduce the heat to low, cover, and simmer for 15-20 minutes or until the water is absorbed and the rice is tender.
  3. While the rice is cooking, heat the vegetable oil in a large skillet over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
  4. Add the fresh spinach to the skillet, stirring frequently until wilted, about 3-4 minutes.
  5. Drizzle the soy sauce and sesame oil over the spinach, mixing well. Cook for an additional 1-2 minutes, then season with salt to taste.
  6. Once the rice is cooked, fluff it with a fork and mix it with the sautéed spinach until well combined.
  7. Serve the Spinach Rice in bowls, garnished with chopped green onions and black sesame seeds.
