Ingredients

  • Fresh spinach - 200 grams
  • Toasted sesame seeds - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Garlic - 1 clove, minced
  • Rice vinegar - 1 teaspoon
  • Sugar - 1 teaspoon
  • Salt - to taste
  • Chili flakes - optional, to taste

Steps

  1. Rinse the fresh spinach under cold water and remove any tough stems.
  2. In a pot, bring water to a boil and blanch the spinach for 1-2 minutes until wilted.
  3. Immediately transfer the spinach to a bowl of ice water to stop the cooking process, then drain and squeeze out excess water.
  4. In a mixing bowl, combine the soy sauce, sesame oil, minced garlic, rice vinegar, sugar, and salt. Whisk until well blended.
  5. Add the drained spinach to the bowl with the dressing and toss gently to coat.
  6. Sprinkle the toasted sesame seeds over the salad and toss again.
  7. If desired, add chili flakes for some heat and mix once more.
  8. Serve immediately or chill in the refrigerator for a few minutes before serving.
