- Sugar - 1 teaspoon
- Salt - to taste
- Chili flakes - optional, to taste
Steps
- Rinse the fresh spinach under cold water and remove any tough stems.
- In a pot, bring water to a boil and blanch the spinach for 1-2 minutes until wilted.
- Immediately transfer the spinach to a bowl of ice water to stop the cooking process, then drain and squeeze out excess water.
- In a mixing bowl, combine the soy sauce, sesame oil, minced garlic, rice vinegar, sugar, and salt. Whisk until well blended.
- Add the drained spinach to the bowl with the dressing and toss gently to coat.
- Sprinkle the toasted sesame seeds over the salad and toss again.
- If desired, add chili flakes for some heat and mix once more.
- Serve immediately or chill in the refrigerator for a few minutes before serving.
