Ingredients

  • Firm tofu - 300 grams
  • Sesame oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Bell pepper - 1 medium, sliced
  • Zucchini - 1 medium, sliced
  • Spinach - 100 grams
  • Gochujang (Korean chili paste) - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Green onions - 2, chopped
  • Sesame seeds - 1 tablespoon for garnish

Steps

  1. Press the tofu for about 15 minutes to remove excess moisture, then cut it into 1-inch cubes.
  2. In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat.
  3. Add the tofu cubes to the skillet and fry until golden and crispy on all sides, about 8-10 minutes. Remove the tofu and set aside.
  4. In the same skillet, add the remaining tablespoon of sesame oil, garlic, and ginger. Sauté for 1-2 minutes until fragrant.
  5. Add the sliced bell pepper and zucchini to the skillet, cooking for about 4-5 minutes until they begin to soften.
  6. Stir in the spinach and cook until wilted, about 2 minutes.
  7. Return the crispy tofu to the skillet and add gochujang, soy sauce, and rice vinegar. Mix well to coat the tofu and vegetables evenly.
  8. Cook for an additional 2-3 minutes to heat through, then remove from heat.
  9. Serve hot, garnished with chopped green onions and sesame seeds.
