Ingredients
- Firm tofu - 300 grams
- Sesame oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Ginger - 1 tablespoon, minced
- Bell pepper - 1 medium, sliced
- Zucchini - 1 medium, sliced
- Spinach - 100 grams
- Gochujang (Korean chili paste) - 2 tablespoons
- Soy sauce - 1 tablespoon
- Rice vinegar - 1 tablespoon
- Green onions - 2, chopped
- Sesame seeds - 1 tablespoon for garnish
Steps
- Press the tofu for about 15 minutes to remove excess moisture, then cut it into 1-inch cubes.
- In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat.
- Add the tofu cubes to the skillet and fry until golden and crispy on all sides, about 8-10 minutes. Remove the tofu and set aside.
- In the same skillet, add the remaining tablespoon of sesame oil, garlic, and ginger. Sauté for 1-2 minutes until fragrant.
- Add the sliced bell pepper and zucchini to the skillet, cooking for about 4-5 minutes until they begin to soften.
- Stir in the spinach and cook until wilted, about 2 minutes.
- Return the crispy tofu to the skillet and add gochujang, soy sauce, and rice vinegar. Mix well to coat the tofu and vegetables evenly.
- Cook for an additional 2-3 minutes to heat through, then remove from heat.
- Serve hot, garnished with chopped green onions and sesame seeds.
