Ingredients
- Firm tofu - 200 grams
- Cooked jasmine rice - 1 cup (200 grams)
- Soy sauce - 2 tablespoons
- Gochujang (Korean chili paste) - 1 tablespoon
- Sesame oil - 1 tablespoon
- Garlic, minced - 2 cloves
- Green onion, chopped - 2 tablespoons
- Carrot, julienned - 1 small
- Bell pepper, sliced - 1/2 medium
- Spinach - 1 cup (30 grams)
- Sesame seeds - 1 tablespoon
- Salt - to taste
Steps
- Press the tofu for 15 minutes to remove excess moisture, then cut it into bite-sized cubes.
- In a bowl, combine soy sauce, gochujang, sesame oil, and minced garlic. Add the tofu cubes and marinate for at least 10 minutes.
- Heat a non-stick skillet over medium heat. Add the marinated tofu and cook for 5-7 minutes until golden brown, stirring occasionally.
- Add the julienned carrot and sliced bell pepper to the skillet, cooking for another 3-4 minutes until they start to soften.
- Stir in the spinach and chopped green onion, cooking for an additional 2 minutes until the spinach wilts.
- Season the mixture with salt to taste.
- Serve the spicy tofu and vegetable mixture over a bed of cooked jasmine rice, garnishing with sesame seeds.
