Ingredients

  • Firm tofu - 200 grams
  • Cooked jasmine rice - 1 cup (200 grams)
  • Soy sauce - 2 tablespoons
  • Gochujang (Korean chili paste) - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Garlic, minced - 2 cloves
  • Green onion, chopped - 2 tablespoons
  • Carrot, julienned - 1 small
  • Bell pepper, sliced - 1/2 medium
  • Spinach - 1 cup (30 grams)
  • Sesame seeds - 1 tablespoon
  • Salt - to taste

Steps

  1. Press the tofu for 15 minutes to remove excess moisture, then cut it into bite-sized cubes.
  2. In a bowl, combine soy sauce, gochujang, sesame oil, and minced garlic. Add the tofu cubes and marinate for at least 10 minutes.
  3. Heat a non-stick skillet over medium heat. Add the marinated tofu and cook for 5-7 minutes until golden brown, stirring occasionally.
  4. Add the julienned carrot and sliced bell pepper to the skillet, cooking for another 3-4 minutes until they start to soften.
  5. Stir in the spinach and chopped green onion, cooking for an additional 2 minutes until the spinach wilts.
  6. Season the mixture with salt to taste.
  7. Serve the spicy tofu and vegetable mixture over a bed of cooked jasmine rice, garnishing with sesame seeds.
