Ingredients

  • Pasta (spaghetti or udon) - 200 grams
  • Firm tofu - 200 grams
  • Gochujang (Korean chili paste) - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Garlic, minced - 2 cloves
  • Ginger, minced - 1 teaspoon
  • Green onions, chopped - 2 stalks
  • Bell pepper, sliced - 1 medium
  • Carrot, julienned - 1 medium
  • Spinach - 100 grams
  • Sesame seeds - 1 tablespoon
  • Fresh cilantro, chopped - 2 tablespoons
  • Lemon juice - 1 tablespoon

Steps

  1. Press the tofu to remove excess moisture, then cube it into bite-sized pieces.
  2. In a large pan, heat 1 tablespoon of sesame oil over medium heat. Add the cubed tofu and sauté until golden brown on all sides. Remove the tofu from the pan and set aside.
  3. In the same pan, add a little more sesame oil if needed and sauté the minced garlic and ginger for about 1 minute until fragrant.
  4. Add the sliced bell pepper and julienned carrot to the pan, cooking for 3-4 minutes until they start to soften.
  5. Stir in the gochujang, soy sauce, and lemon juice, mixing well to coat the vegetables.
  6. Meanwhile, cook the pasta according to package instructions until al dente. Drain and set aside.
  7. Add the cooked pasta and crispy tofu to the pan with the vegetables, tossing everything together to combine and heat through.
  8. Finally, stir in the spinach and chopped green onions, cooking for an additional 1-2 minutes until the spinach wilts.
  9. Serve hot, garnished with sesame seeds and fresh cilantro.
