Ingredients

  • Firm tofu - 300 grams
  • Garlic - 2 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Soy sauce - 2 tablespoons
  • Gochujang (Korean chili paste) - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Cornstarch - 2 tablespoons
  • Green onions - 2, chopped
  • Panko breadcrumbs - 1/2 cup
  • Burger buns - 2
  • Lettuce leaves - 4
  • Tomato - 1, sliced
  • Cucumber - 1/2, sliced
  • Vegan mayo - 2 tablespoons
  • Sriracha - 1 tablespoon (optional)

Steps

  1. Press the tofu for 15 minutes to remove excess moisture, then crumble it into a mixing bowl.
  2. Add minced garlic, grated ginger, soy sauce, gochujang, sesame oil, chopped green onions, and cornstarch to the crumbled tofu. Mix well until combined.
  3. Fold in the panko breadcrumbs until the mixture holds together. If it's too wet, add a little more cornstarch.
  4. Divide the mixture into two equal portions and shape them into patties.
  5. Heat a non-stick skillet over medium heat and add a little oil. Cook the patties for 5-7 minutes on each side until golden brown and crispy.
  6. While the patties are cooking, prepare the burger buns by toasting them lightly if desired.
  7. Spread vegan mayo on the bottom half of each bun, then add lettuce, the tofu patty, tomato slices, cucumber slices, and a drizzle of sriracha if using.
  8. Top with the other half of the bun, serve immediately, and enjoy your spicy tofu burger!
