Ingredients

  • Sesame oil - 1 tablespoon
  • Gochugaru (Korean red pepper flakes) - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Garlic - 1 clove, minced
  • Sesame seeds - 1 teaspoon
  • Salt - to taste

Steps

  1. Clean the squid thoroughly, removing the innards and beak, then slice the body into rings.
  2. In a pot of boiling water, blanch the squid rings for about 2 minutes until they turn opaque, then drain and cool under cold water.
  3. In a large mixing bowl, combine the cucumber, carrot, red bell pepper, and green onion.
  4. In a separate bowl, whisk together the sesame oil, gochugaru, soy sauce, rice vinegar, and minced garlic to make the dressing.
