- Zucchini - 1 medium, sliced
- Green onions - 3 stalks, chopped
- Garlic - 3 cloves, minced
- Ginger - 1 teaspoon, grated
- Soy sauce - 2 tablespoons
- Gochujang (Korean chili paste) - 1 tablespoon
- Sesame oil - 1 tablespoon
- Olive oil - 1 tablespoon
- Black pepper - 1/2 teaspoon
- Sesame seeds - 1 tablespoon, toasted
Steps
- In a bowl, combine the sliced pork tenderloin, soy sauce, gochujang, sesame oil, minced garlic, grated ginger, and black pepper. Mix well and marinate for at least 10 minutes.
- Heat olive oil in a large skillet or wok over medium-high heat.
- Add the marinated pork to the skillet and stir-fry for 5-7 minutes until browned and cooked through.
- Add the sliced red bell pepper and zucchini to the skillet. Stir-fry for an additional 3-4 minutes until the vegetables are tender but still crisp.
- Stir in the chopped green onions and remove from heat.
