Ingredients

  • Pork shoulder - 300 grams, thinly sliced
  • Soy sauce - 3 tablespoons
  • Gochujang (Korean chili paste) - 2 tablespoons
  • Brown sugar - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Sesame oil - 1 tablespoon
  • Black pepper - 1 teaspoon
  • Red pepper flakes - 1 teaspoon
  • Rice vinegar - 1 tablespoon

Steps

  1. In a large mixing bowl, combine soy sauce, gochujang, brown sugar, minced garlic, grated ginger, sesame oil, black pepper, red pepper flakes, and rice vinegar to create the marinade.
  2. Add the thinly sliced pork shoulder to the marinade, ensuring each piece is well coated. Cover the bowl and refrigerate for at least 2 hours, or overnight for best results.
  3. Preheat your oven to 70°C (160°F) or set your dehydrator according to the manufacturer's instructions.
  4. Line a baking sheet with parchment paper or use a dehydrator tray. Arrange the marinated pork slices in a single layer, making sure they do not overlap.
  5. If using an oven, place the baking sheet in the oven and leave the door slightly ajar to allow moisture to escape. Bake for 3-4 hours until the jerky is dry and firm but still slightly pliable.
  6. If using a dehydrator, dehydrate the pork for approximately 4-6 hours, or until fully dried.
  7. Once the jerky is done, remove it from the oven or dehydrator and let it cool completely before storing it in an airtight container.
