- Pork shoulder - 300 grams, thinly sliced
- Soy sauce - 3 tablespoons
- Gochujang (Korean chili paste) - 2 tablespoons
- Brown sugar - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Sesame oil - 1 tablespoon
- Black pepper - 1 teaspoon
- Red pepper flakes - 1 teaspoon
- Rice vinegar - 1 tablespoon
Steps
- In a large mixing bowl, combine soy sauce, gochujang, brown sugar, minced garlic, grated ginger, sesame oil, black pepper, red pepper flakes, and rice vinegar to create the marinade.
- Add the thinly sliced pork shoulder to the marinade, ensuring each piece is well coated. Cover the bowl and refrigerate for at least 2 hours, or overnight for best results.
- Preheat your oven to 70°C (160°F) or set your dehydrator according to the manufacturer's instructions.
- Line a baking sheet with parchment paper or use a dehydrator tray. Arrange the marinated pork slices in a single layer, making sure they do not overlap.
- If using an oven, place the baking sheet in the oven and leave the door slightly ajar to allow moisture to escape. Bake for 3-4 hours until the jerky is dry and firm but still slightly pliable.
- If using a dehydrator, dehydrate the pork for approximately 4-6 hours, or until fully dried.
- Once the jerky is done, remove it from the oven or dehydrator and let it cool completely before storing it in an airtight container.
