Steps

  1. Cook the soba noodles according to the package instructions until al dente. Drain and rinse under cold water to stop the cooking process.
  2. In a large mixing bowl, combine the cooked soba noodles, julienned carrot, cucumber, red bell pepper, chopped green onions, and cilantro.
