- black beans - 240 grams (1 can, drained and rinsed)
- quinoa - 50 grams (1/4 cup, cooked)
- gochujang - 30 grams (2 tablespoons)
- soy sauce - 15 ml (1 tablespoon)
- garlic powder - 2 grams (1/2 teaspoon)
- onion powder - 2 grams (1/2 teaspoon)
- ground cumin - 2 grams (1/2 teaspoon)
- olive oil - 15 ml (1 tablespoon)
- bread crumbs - 30 grams (1/4 cup)
- salt - 2 grams (1/2 teaspoon)
- black pepper - 1 gram (1/4 teaspoon)
- burger buns - 2 units (preferably whole grain or vegan)
- kimchi - 100 grams (for topping)
- cucumber - 50 grams (sliced, for topping)
- avocado - 50 grams (sliced, for topping)
Steps
- In a large mixing bowl, mash the black beans with a fork or potato masher until mostly smooth but still slightly chunky.
- Add the cooked quinoa, gochujang, soy sauce, garlic powder, onion powder, ground cumin, olive oil, bread crumbs, salt, and black pepper to the mashed black beans. Mix until well combined.
- Form the mixture into two equal-sized patties.
- Heat a non-stick skillet over medium heat and add a little olive oil. Cook the patties for about 5-7 minutes on each side, or until they are golden brown and heated through.
- Toast the burger buns in the skillet for 1-2 minutes until slightly crispy.
- Assemble the burgers by placing the patty on the bottom half of the bun. Top with kimchi, cucumber slices, and avocado. Place the top half of the bun on and serve immediately.
