Ingredients

  • Canned chickpeas - 400 grams, drained and rinsed
  • Panko breadcrumbs - 100 grams
  • Green onion - 2 stalks, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Gochujang (Korean chili paste) - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - for cooking
  • Burger buns - 2, dairy-free
  • Lettuce leaves - 2
  • Sliced cucumber - 1/2 cucumber
  • Sliced radishes - 4, for garnish

Steps

  1. In a large mixing bowl, mash the drained chickpeas with a fork or potato masher until mostly smooth with some chunks remaining.
  2. Add the panko breadcrumbs, chopped green onion, minced garlic, grated ginger, gochujang, soy sauce, sesame oil, salt, and black pepper to the mashed chickpeas. Mix until well combined.
  3. Divide the mixture into two equal portions and shape each portion into a patty.
  4. Heat a skillet over medium heat and add a little olive oil. Cook the patties for about 4-5 minutes on each side, or until golden brown and crispy.
  5. Toast the burger buns in the same skillet until lightly browned.
  6. Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the chickpea patty, sliced cucumber, and garnish with sliced radishes. Top with the other half of the bun.
  7. Serve immediately with your favorite dipping sauce or side.
