- Canned chickpeas - 400 grams, drained and rinsed
- Panko breadcrumbs - 100 grams
- Green onion - 2 stalks, finely chopped
- Garlic - 2 cloves, minced
- Ginger - 1 tablespoon, grated
- Gochujang (Korean chili paste) - 2 tablespoons
- Soy sauce - 1 tablespoon
- Sesame oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - for cooking
- Burger buns - 2, dairy-free
- Lettuce leaves - 2
- Sliced cucumber - 1/2 cucumber
- Sliced radishes - 4, for garnish
Steps
- In a large mixing bowl, mash the drained chickpeas with a fork or potato masher until mostly smooth with some chunks remaining.
- Add the panko breadcrumbs, chopped green onion, minced garlic, grated ginger, gochujang, soy sauce, sesame oil, salt, and black pepper to the mashed chickpeas. Mix until well combined.
- Divide the mixture into two equal portions and shape each portion into a patty.
- Heat a skillet over medium heat and add a little olive oil. Cook the patties for about 4-5 minutes on each side, or until golden brown and crispy.
- Toast the burger buns in the same skillet until lightly browned.
- Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the chickpea patty, sliced cucumber, and garnish with sliced radishes. Top with the other half of the bun.
- Serve immediately with your favorite dipping sauce or side.
