- Garlic - 4 cloves, minced
- Ginger - 1 teaspoon, grated
- Onion - 1 medium, sliced
- Carrot - 1 medium, sliced
- Zucchini - 1 medium, sliced
- Potato - 1 medium, diced
- Chicken broth - 500 ml
- Green onions - 2, chopped
- Salt - to taste
- Black pepper - to taste
- Red chili flakes - 1 teaspoon (optional for extra heat)
Steps
- In a large pot, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing until fragrant.
- Add the sliced onion and cook until translucent, about 3-4 minutes.
- Stir in the chicken pieces and cook until they are lightly browned on all sides, approximately 5-7 minutes.
- Mix in the Korean red pepper paste and soy sauce, stirring to coat the chicken evenly.
- Add the sliced carrot, zucchini, diced potato, and chicken broth. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 20-25 minutes, or until the vegetables are tender.
- Season the stew with salt, black pepper, and red chili flakes if desired. Stir in the chopped green onions just before serving.
- Serve hot, ideally with steamed rice on the side.
