Ingredients

  • Korean red pepper paste (Gochujang) - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Garlic - 4 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Onion - 1 medium, sliced
  • Carrot - 1 medium, sliced
  • Zucchini - 1 medium, sliced
  • Potato - 1 medium, diced
  • Chicken broth - 500 ml
  • Green onions - 2, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Red chili flakes - 1 teaspoon (optional for extra heat)

Steps

  1. In a large pot, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing until fragrant.
  2. Add the sliced onion and cook until translucent, about 3-4 minutes.
  3. Stir in the chicken pieces and cook until they are lightly browned on all sides, approximately 5-7 minutes.
  4. Mix in the Korean red pepper paste and soy sauce, stirring to coat the chicken evenly.
  5. Add the sliced carrot, zucchini, diced potato, and chicken broth. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 20-25 minutes, or until the vegetables are tender.
  6. Season the stew with salt, black pepper, and red chili flakes if desired. Stir in the chopped green onions just before serving.
  7. Serve hot, ideally with steamed rice on the side.
