Ingredients

  • Beef brisket - 200 grams, thinly sliced
  • Water - 500 ml
  • Korean radish (mu) - 100 grams, sliced
  • Green onions - 2 stalks, chopped
  • Garlic - 3 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Korean red pepper flakes (gochugaru) - 2 tablespoons
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Mushrooms (shiitake or enoki) - 50 grams, sliced
  • Spinach - 50 grams, washed

Steps

  1. In a pot, combine the water, sliced beef, Korean radish, garlic, and ginger. Bring to a boil over medium-high heat.
  2. Once boiling, reduce the heat to medium-low and simmer for 10 minutes, skimming off any foam that rises to the top.
  3. Add the gochugaru, soy sauce, sesame oil, and season with salt and black pepper. Stir well and let it simmer for an additional 10 minutes.
  4. Add the mushrooms and spinach to the pot, cooking for 5 more minutes until the mushrooms are tender and the spinach is wilted.
  5. Finally, stir in the chopped green onions and let the soup sit for a couple of minutes before serving.
