- Water - 500 ml
- Korean radish (mu) - 100 grams, sliced
- Green onions - 2 stalks, chopped
- Garlic - 3 cloves, minced
- Ginger - 1 teaspoon, grated
- Korean red pepper flakes (gochugaru) - 2 tablespoons
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Mushrooms (shiitake or enoki) - 50 grams, sliced
- Spinach - 50 grams, washed
Steps
- In a pot, combine the water, sliced beef, Korean radish, garlic, and ginger. Bring to a boil over medium-high heat.
- Once boiling, reduce the heat to medium-low and simmer for 10 minutes, skimming off any foam that rises to the top.
- Add the gochugaru, soy sauce, sesame oil, and season with salt and black pepper. Stir well and let it simmer for an additional 10 minutes.
- Add the mushrooms and spinach to the pot, cooking for 5 more minutes until the mushrooms are tender and the spinach is wilted.
- Finally, stir in the chopped green onions and let the soup sit for a couple of minutes before serving.
