Ingredients

  • Beef top round - 250 grams
  • Soy sauce - 60 ml
  • Gochujang (Korean chili paste) - 30 grams
  • Brown sugar - 15 grams
  • Sesame oil - 10 ml
  • Garlic (minced) - 2 cloves
  • Ginger (grated) - 1 teaspoon
  • Black pepper - 1 teaspoon
  • Red pepper flakes - 1 teaspoon
  • Green onion (chopped) - 1 tablespoon
  • Sesame seeds - 1 tablespoon

Steps

  1. Slice the beef top round into thin strips, about 0.5 cm thick, and place them in a large mixing bowl.
  2. In a separate bowl, combine the soy sauce, gochujang, brown sugar, sesame oil, minced garlic, grated ginger, black pepper, and red pepper flakes to create the marinade.
  3. Pour the marinade over the beef strips, ensuring they are fully coated. Cover the bowl and marinate in the refrigerator for at least 4 hours, preferably overnight for maximum flavor.
  4. Preheat your oven to 70°C (160°F) and line a baking sheet with parchment paper.
  5. Arrange the marinated beef strips in a single layer on the prepared baking sheet, ensuring they do not overlap.
  6. Place the baking sheet in the oven and dry the beef for about 3-4 hours, or until the jerky is firm and slightly chewy but not brittle.
  7. Once done, remove the jerky from the oven and let it cool completely. Sprinkle with chopped green onions and sesame seeds before serving.
  8. Store any leftovers in an airtight container at room temperature for up to two weeks.
