Ingredients

  • Soybean paste (Doenjang) - 3 tablespoons
  • Water - 500 ml
  • Tofu (firm) - 100 grams, diced
  • Zucchini - 1 small, sliced
  • Carrot - 1 small, sliced
  • Mushrooms (shiitake or button) - 50 grams, sliced
  • Green onion - 2 stalks, chopped
  • Garlic - 2 cloves, minced
  • Sesame oil - 1 teaspoon
  • Red chili pepper - 1, sliced (optional)
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a pot, combine the water and soybean paste, stirring well to dissolve the paste.
  2. Add minced garlic, zucchini, carrot, and mushrooms to the pot, and bring to a boil over medium heat.
  3. Once boiling, reduce the heat and let it simmer for about 10 minutes until the vegetables are tender.
  4. Add the diced tofu and chopped green onions to the pot, and continue to simmer for another 5 minutes.
  5. Drizzle sesame oil, and season with salt and black pepper to taste. If using, add sliced red chili pepper for heat.
  6. Serve hot, garnished with additional green onions if desired.
