Ingredients
- Soybean paste (Doenjang) - 3 tablespoons
- Water - 500 ml
- Tofu (firm) - 100 grams, diced
- Zucchini - 1 small, sliced
- Carrot - 1 small, sliced
- Mushrooms (shiitake or button) - 50 grams, sliced
- Green onion - 2 stalks, chopped
- Garlic - 2 cloves, minced
- Sesame oil - 1 teaspoon
- Red chili pepper - 1, sliced (optional)
- Salt - to taste
- Black pepper - to taste
Steps
- In a pot, combine the water and soybean paste, stirring well to dissolve the paste.
- Add minced garlic, zucchini, carrot, and mushrooms to the pot, and bring to a boil over medium heat.
- Once boiling, reduce the heat and let it simmer for about 10 minutes until the vegetables are tender.
- Add the diced tofu and chopped green onions to the pot, and continue to simmer for another 5 minutes.
- Drizzle sesame oil, and season with salt and black pepper to taste. If using, add sliced red chili pepper for heat.
- Serve hot, garnished with additional green onions if desired.
