  • Soy sauce - 3 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Green onions - 2 stalks, chopped
  • Carrot - 1 medium, julienned
  • Bell pepper - 1 small, sliced
  • Spinach - 100 grams
  • Black pepper - 1/2 teaspoon
  • Water - 1 liter

Steps

  1. Bring 1 liter of water to a boil in a large pot. Add the udon noodles and cook according to package instructions, usually around 8-10 minutes. Drain and set aside.
  2. In a large skillet or wok, heat the sesame oil over medium heat. Add the minced garlic and stir-fry for about 30 seconds until fragrant.
  3. Add the sliced chicken breast to the skillet and cook for 5-7 minutes until golden brown and fully cooked through.
  4. Stir in the julienned carrot, sliced bell pepper, and chopped green onions. Cook for an additional 3-4 minutes until the vegetables are tender.
  5. Add the cooked udon noodles to the skillet along with the soy sauce and black pepper. Toss everything together to evenly coat the noodles and heat through for about 2-3 minutes.

  7. Serve hot, garnished with extra green onions if desired.
